Sweet potato & chick pea soup
INGREDIENTS:
1 tablespoon olive oil
1 large onion, chopped
1 sweet potato, diced
1 tablespoon Moroccan spice
400g can chopped tomatoes
400g can Edgell Chick Peas, undrained

2 cups chicken stock
Dukkah for garnish


METHOD:
1. Heat oil in a large saucepan, add onion and sweet potato, cook for 2 minutes. Add spice, cook for 1 minute stirring well.

2. Stir in tomatoes, undrained Edgell Chick Peas and stock. Bring to the boil, cover and simmer for 10 minutes.

3. Serve soup sprinkled with dukkah and warm Turkish bread if desired.

SERVES: 4

PREPARATION TIME: 10 minutes
COOKING TIME: 15 minutes

TIP: Dukah is a blend of Middle Eastern mixed spices and seeds available from the supermarket or deli. Sweet potato or pumpkin can be used in this recipe.
