Bean salad with tomato pesto dressing
INGREDIENTS:
2 cups rocket leaves
420g can Edgell Four Bean Mix, drained
6-8 cherry tomatoes, halved
½ sliced avocado
½ Lebanese cucumber, sliced
1 tablespoon tomato pesto
¼ cup fat free French dressing


METHOD:
1. Combine rocket leaves, drained Edgell Four Bean Mix, tomatoes, avocado and cucumber.

2. Place into a serving bowl and drizzle with combined tomato pesto and dressing.

SERVES: 4

PREPARATION TIME: 10 minutes

TIP: Salad can have extra ingredients added eg. celery, carrot, spring onion.
