What are Borlotti Beans?
Borlotti Beans are a classic Italian bean and are also known as Roman, Cranberry, Saluggia or Rosecoco beans. They are plump, beige or brown or, most commonly, speckled pink, (once cooked, the speckled markings disappear). They have a smooth creamy texture and are very popular in soups and Italian and Portuguese cuisine.
